Hangover-Busting smoothie!

After lots of requests for more smoothies and more hangover-cures we thought we'd combine the two with our Hangover-Busting Almond and Berry Smoothie! Almonds have been proven to alleviate the nausea feeling we get from drinking too much and berries are an excellent natural detox food! Lastly, bananas are packed full of potassium which replenishes any nutrients lost! 


Ingredients

1/4 cup raw or blanched almonds
1 ripe banana
1/2 cup mixed berries (blueberries, raspberries blackberries strawberries etc)
1 cup filtered water
1/2 tsp cinnamon
1/2 tsp vanilla extract

Method

1. Place almonds in a blender and add a quarter of the water

2. Blend until a paste is formed

3. Keep adding water until you have the consistency of almond milk you may need to add some extra water

4. Drop in banana, fruit vanilla and cinnamon then blend until smooth

5. Serve in a tall glass and enjoy


Creamy Smoothie



Here's a delicious and filling smoothie for you all. Honey has a wide range of health benefits, it  boosts your immune system, aides weight loss, soothes indigestion and boosts energy. 

Ingredients:
1 banana
1/2 mango
3/4 glass natural greek  yogurt 
1 heaped normal spoon of honey

Method:
Chop the banana and mango
Blend all the ingredients using a hand blender or a smoothie maker

Student tips:
  • Used tinned mango 
  • Lidl's does a great "bucket" natural greek yogurt 
  • To make this dairy free,  use almond milk 



Curried Butternut Squash Soup

Simple, cheap and tasty, what more do you want?
Ingredients

  • 1 Butternut Squash, chopped into cubes
  • 2 Carrots, chopped into cubes
  • 1 onion sliced
  • 2 tbsp curry paste of your choice
  • 1 chicken stock cube dissolved in 450ml water
  • salt and pepper
Instructions
  1. Heat your oven to Gas Mark 6.
  2. Put the squash onto a baking tray, put in the curry paste and mix around with your hands until all coated (sorry bit messy!) Then bung in the oven for about 40mins
  3. Put carrots and onion in a pan and fry until onion soft.
  4. When the squash is roasted and soft, put in the pan with the carrots and onions and add the stock and let the mixture simmer for about 30 mins until carrot is soft
  5. Blend, taste, add salt and pepper if you want, eat!
Student Tips
  • This still tastes great without the curry paste, if you still want spice try adding chilli flakes when you fry the onion and carrot.


Lamb and Veg Soup


Ingredients
  • 200g lamb, trimmed of fat and cut into small pieces
  • ½ large onion, finely chopped
  • 50g pearl barley
  • 600g mixed root vegetables (we used potato, carrots and leek)
  • 2 tsp Worcestershire sauce
  • 1 litre of Beef stock
  • 1 thyme sprig (or dried thyme)
  • 100g green beans, finely chopped
Method
  1. Prepare the vegetables
  2. Boil the vegetables until soft
  3. Season the lamb and fry for a few minutes until browned. Add in the onions to fry too
  4. Pour the beef stock into a large saucepan and stir
  5. Add the vegetables and lamb into the saucepan then add the barley, thyme and Worcestershire sauce
  6. Cover and leave to simmer for 20 minutes
  7. When everything is cooked, spoon about a quarter of the soup into a separate pan
  8. Purée with a stick blender (or put into a normal blender and whizz), then stir it back into the rest of the soup
  9. Ladle the soup into bowls and serve with wholemeal bread
Student Tips

  • Buy cheaper cuts of lamb to save on costs
  • If using dried thyme, only use a little as it is quite strong
  • You can use any veg you like for this soup
  • Freeze any leftovers for a later date!


Simple Smoothie


The simplest of smoothies yet one of the tastiest! It is also one of the cheapest smoothies around, we made this one for around £1. Bargain. 
Through their raspberry ketone content, raspberries can increase your metabolism. Did you know, that there are 200 types of raspberries in the world for you all to enjoy?!

Ingredients:
1 ripe banana
1 handful of frozen raspberries
1 glass almond milk
                                                                 
Method:
Chop the  banana into small pieces
Add all ingredients together and blend using either a hand blender or a smoothie maker


Life is rarely as simple (and delicious) as this! ENJOY x


Student Tips:

  • Always buy frozen fruit
  • Swap the raspberries for an in season fruit 


Green!
We just call this soup 'green'- no points for guessing why!
This soup is so simple and full of vitamins and iron, its also super low calorie!
 

Ingredients
  • 1 bag Spinach
  • 1 bag Watercress
  • 1 large onion (we used 3 shallots)
  • Broccoli stalks- great way to use them!
  • 1 stock cube in 500ml water
  • 1 sachet of microwave oats
  • Salt and Pepper
Instructions
  1. Chop the onion and the broccoli stalks and fry in a large pan until onions soft.
  2. Add in the stock and oats and let simmer until broccoli stalks are soft.
  3. Add the Spinach and Watercress
  4. Blintz and season to taste!
Student tips
We added cabbage because it was in the fridge, any green vedge you have will work, frozen peas are great too
If you don't have oats use a potato to thicken.



Mango and Banana Overnight Oats!


These are so so easy to make the night before. A delicious breakfast to fuel you through the day!

Ingredients:

Mango and banana puree:
½ mango
½ ripe banana
splash of almond milk


Oat Mix:

½ ripe banana
1/3 cup oats
¼ cup almond milk
½ tablespoon honey

Topping:

½ passionfruit


(I made this the day after I had made “Tuesday smoothday”, so I handily had half a mango and half a passionfruit!    Check out the recipe for that here)


Method

Manago and banana puree :
First chop the mango and banana up small (if you have a food processor, then obviously no need)
Then add them alongside the almond milk to either your smoothie maker or hand blender and blend until creamy!
Then fill a third of a glass (I would recommend a long glass or two smaller ones)  leave the rest of the mixture for the time being


Oat Mix:
Put the almond milk, oats and honey into a bowl and stir well!
Then mash the other half of the banana into the mix
The oat mix is then layered over the puree in your glass or glasses


Then add the rest of your puree to the top!
I added half a passion fruit to the top because I had it!
Leave overnight and in the moring, voila !!!!!

Student tips:

·      Use tinned mango
·      Swap the mango for other fruit you have , just ensure to use the same ingredient ratio
·      Use skimmed milk if you don’t have almond milk
·      Plan ahead!! Plan when you are going to have a smoothie and overnight oats, to make optimal use of more expensive ingredients!
·      Easily make this gluten free by adding gluten free oats!

Roast Tomato and Lentil Soup


Hi Guys!

Here's another really really easy and super cheap recipe! This soup costs just £3.45 to make and will cover 4 lunches- that's 86p A MEAL!!

Ingredients 

  • 2 punnets of large salad tomatoes
  • 400g tin chopped tomatoes
  • 1 carrot- chopped into little cubes
  • 1 large onion- sliced
  • big squeeze of tomato puree 
  • Red split lentils- about quarter of a bag
  • 1 stock cube in 450ml boiling water
  • salt and pepper
  • Fresh Basil - ripped into small pieces (optional) 
  • 2 Splashes of oil
Steps
  1. Preheat oven to gas mark 4. Slice all fresh tomatoes and put into baking tray. Drizzle with a tiny bit of oil and scrunch on some salt and pepper.
  2. Roast tomatoes in oven until cooked through and starting to go a bit brown in places- probably take 45 mins ish!
  3. Fry onion, carrot and half the basil in a smidge of oil until onion soft (you're going to need a big pan for this one!) 
  4.  Add the roasted tomatoes and lentils and stir until all covered in tomato juice (careful, lentils get stuck to the bottom of the pan if you let them!)
  5. Pour in the tin of tomatoes and stock and turn soup onto low simmer
  6. Stir in rest of basil, squeeze of puree, salt and pepper
  7. Let it bubble away until carrots and lentils are all cooked and soft
  8. Blend!
Top Tips
  • This tastes great with chilli flakes if you like it hot! Throw some in when you're cooking the onion and carrot
  • Make it last even longer! Add extra carrot, lentils or tomatoes.
  • The soup might come out a bit thick- just add water!

Tuesday Smoothday!



                                           “Banana, Passionfruit and Mango”

This is a delicious fresh smoothie, perfect on this cloudy day.
The honey is packed full of calcium, iron, B vitamins and potassium.
Mangoes ooze benefits such as creating clear skin, improving eye health and through their Vitamin E content they can even improve your sex life! Bet you didn’t know that!



Ingredients:

1 ripe banana
½ ripe mango
½ passionfruit
1 tsp honey
1 glass almond milk or hazelnut milk

Method:

Chop the banana and mango into small pieces
Add all ingredients together and either use a hand blender or a smoothie maker to blend!

What could be easier!   ENJOY x


Student saver tips:
·      Used tinned mango instead of fresh
·      Used skimmed milk instead of almond or hazelnut milk
·      Use two bananas instead of mango and passionfruit
